Recipe
1kg eggplants washed and cut in cubes . ( peel skin if tough)
1/4 Olive oil
4 cloves of garlic finely chopped
2 tomatoes
1 tbsp Racy Blend
1 onion chopped.
Salt to taste

Ingredients

1/2 iceberg lettuce finely chopped.
6 grape tomatoes cut in 1/2.
1 carrot finely grated.
1 mango sliced or cubed
2tbsp finely chopped coriander leaves.
1tbsp finely chopped mint leaves.
Salt to taste .
