Chicken Curry

Ingredients

  • 1/2 kilogram of chicken pieces

  • 4 cloves of garlic, minced

  • 2 medium brown onions, chopped

  • 2 cm of fresh ginger, minced

  • ¼ cup of ghee or sunflower oil

  • ¼ cup of water

  • 4-5 teaspoons of Bibi’s Curry spice blend

  • ¼ teaspoon of salt

  • 1 whole medium tomato, chopped roughly

  • Fresh coriander, finely chopped

Method

  1. Heat the oil or ghee in a large saucepan on medium heat, adding the onions until caramelised then add the garlic and ginger, stirring gently until the oil/ghee separates.

  2. Add the water and continue to stir until the oil separates again. Add the spice blend plus the salt, stir for a few minutes before adding the tomato, combining all to make a paste.

  3. Now add the chicken and mix well together. Continue to cook on medium heat for a further 20 minutes occasionally stirring.

  4. After 20 minutes stir in a little water for 5 minutes then simmer on low heat until the oil surfaces.
