Chicken Curry
Ingredients
- 1/2 kilogram of chicken pieces 
- 4 cloves of garlic, minced 
- 2 medium brown onions, chopped 
- 2 cm of fresh ginger, minced 
- ¼ cup of ghee or sunflower oil 
- ¼ cup of water 
- 4-5 teaspoons of Bibi’s Curry spice blend 
- ¼ teaspoon of salt 
- 1 whole medium tomato, chopped roughly 
- Fresh coriander, finely chopped 
Method
- Heat the oil or ghee in a large saucepan on medium heat, adding the onions until caramelised then add the garlic and ginger, stirring gently until the oil/ghee separates. 
- Add the water and continue to stir until the oil separates again. Add the spice blend plus the salt, stir for a few minutes before adding the tomato, combining all to make a paste. 
- Now add the chicken and mix well together. Continue to cook on medium heat for a further 20 minutes occasionally stirring. 
- After 20 minutes stir in a little water for 5 minutes then simmer on low heat until the oil surfaces.
