Chicken Curry
Ingredients
1/2 kilogram of chicken pieces
4 cloves of garlic, minced
2 medium brown onions, chopped
2 cm of fresh ginger, minced
¼ cup of ghee or sunflower oil
¼ cup of water
4-5 teaspoons of Bibi’s Curry spice blend
¼ teaspoon of salt
1 whole medium tomato, chopped roughly
Fresh coriander, finely chopped
Method
Heat the oil or ghee in a large saucepan on medium heat, adding the onions until caramelised then add the garlic and ginger, stirring gently until the oil/ghee separates.
Add the water and continue to stir until the oil separates again. Add the spice blend plus the salt, stir for a few minutes before adding the tomato, combining all to make a paste.
Now add the chicken and mix well together. Continue to cook on medium heat for a further 20 minutes occasionally stirring.
After 20 minutes stir in a little water for 5 minutes then simmer on low heat until the oil surfaces.
