Potato Pie

Ingredients

  • 5 medium potatoes cut into quarters

  • 1/2 kg premium beef mince

  • 1 medium onion chopped finely 2 tablespoon of olive oil

  • 1 egg

  • Salt to taste

  • 1 1/2 tablespoons of Bibi’s kitchen tasty spice blend

  • 1/2 cup of breadcrumbs

    Method

    1. Heat the oil then add the chopped onions.
    2. Fry the onions for 5mins before adding the mincemeat plus the spices (for a little more zing you can a add whole chillies?) plus a pinch of salt.
    3. Continue to this on medium heat until cooked through and has a somewhat dry finish. Stand aside to cool boil the potatoes in a pot until soft.
    4. Drain the water well and mash it to smooth texture.
    5. Add salt, breadcrumbs and the egg mixing in well.

    Final assembly
    1. Grease the fry pan with oil or butter thoroughly before adding 1/2 of the mashed potatoes at the bottom then add all the mincemeat mixture then lastly place the remainder of the potatoes on top, spreading evenly.
    2. Turn the stove to a medium heat and cover, cook for 10 mins keeping an eye on the saucepan so it doesn’t burn
    3. Before you turn the pie to cook on the top apply a little bit of oil or butter.
    4. Gently and carefully turn the mixture to cook the top.
    5. After 15 mins it should have a nice solid colour.

    Then serve with salad or steamed vegetables of your choice.


    Variations for vegetarian option is to use brown lentils and add 1 tomato to avoid a dry mixture. Using tasty spice blends with whole chillies 🌶 can add more heat if you like HOT taste especially with a vegetarian option.
