Butter Chicken

Ingredients

  • 1/2kg chicken thigh fillets

  • 1/4 cup plain yogurt (whip it well)

  • 1 knob ginger-( 1/2 tsp minced ginger and garlic )

  • Fresh garlic 4 cloves

  • 1 med onion

  • 1 can of diced can tomatoes or passata (1 cup)

  • pouring cream or cooking cream (optional)

  • 5-tsp of Bibi’s spices or any good quality Indian curry mix (3 tsp in marinate and 2 tsp)

  • 50g butter or ghee

  • 2 tbsp tomato sauce

  • Salt

Method

  1. Marinate chicken pieces in garlic ginger and salt and Bibi’s spice blend for at least 2 hrs (the longer the better).

  2. Then add the chicken to the whipped yogurt let it sit in there for 15 mins or and then remove yogurt access from the chicken. (To prevent it from being watery)

  3. Heat a very hot pan and brush with oil and fry the chicken pieces and put it keep aside. ( it doesn't matter if chicken pieces are charred a bit )

  4. In a pot add oil 2 tbsp or ghee and fry onion until translucent, add salt and add a further 2tsp Bibis Kitchen spices.

  5. Gently fry then add can tomatoes or passata, cook until oil separates.

  6. Blend the onion and tomatoes mix into a smooth paste (take it out of pot blend and then add add back into pot) or use Passata instead.

  7. Gently simmer be careful it doesn’t splatter then add the chicken pieces and butter or ghee, simmer gently add tomato sauce, then cream. Simmer for further 10-15 mins. Taste to check seasoning.
