Roast Vegetables
Ingredients:
2 cups of broccoli
2 cups of mushrooms
2 cups of zucchini (cut into chunks)
2 red onions (cut into rings)
1 red capsicum (chunky pieces)
corn (cut into bite size pieces)
1 eggplant (cut into slices)
1 punnet cherry tomatoes
3 tbs of tasty Spice blend
3 tbs of olive oil
2 cloves of garlic mince
salt to taste
Method:
Mix all ingredients into a bowl.
Leave marinating for half an hour.
Roast at 200C for 20 minutes, or BBQ hot plate until charred.
