Roast Vegetables

Ingredients:

  • 2 cups of broccoli

  • 2 cups of mushrooms

  • 2 cups of zucchini (cut into chunks)

  • 2 red onions (cut into rings)

  • 1 red capsicum (chunky pieces)

  • corn (cut into bite size pieces)

  • 1 eggplant (cut into slices)

  • 1 punnet cherry tomatoes

  • 3 tbs of tasty Spice blend

  • 3 tbs of olive oil

  • 2 cloves of garlic mince

  • salt to taste

Method:

  1. Mix all ingredients into a bowl.

  2. Leave marinating for half an hour.

  3. Roast at 200C for 20 minutes, or BBQ hot plate until charred.
